  • 2 cups mixed greens (like arugula, spinach, or mesclun)
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ¼ cup fresh parsley or cilantro, chopped
  • ¼ cup grated Parmesan cheese (optional)

For the Dressing:
